Ingredients
  

  • 2 pounds of baby potatoes
  • 4 cloves of garlic minced
  • 1/2 cup of grated Parmesan cheese
  • 4 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes.
  3. In a mixing bowl, combine olive oil, minced garlic, oregano, salt, and pepper.
  4. Add the halved potatoes to the bowl and toss until evenly coated.
  5. Spread the coated potatoes on a baking sheet in a single layer.
  6. Sprinkle grated Parmesan cheese over the potatoes.
  7. Roast in the preheated oven for 25-30 minutes, flipping halfway through.
  8. Remove from oven and let cool for a few minutes before serving.
