- Preheat your oven to 425°F (220°C).
- Wash and halve the baby potatoes.
- In a mixing bowl, combine olive oil, minced garlic, oregano, salt, and pepper.
- Add the halved potatoes to the bowl and toss until evenly coated.
- Spread the coated potatoes on a baking sheet in a single layer.
- Sprinkle grated Parmesan cheese over the potatoes.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through.
- Remove from oven and let cool for a few minutes before serving.
