In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy.
Add the molasses, egg, and vanilla extract to the creamed mixture, and beat until fully incorporated.
Gradually blend the dry mixture into the wet ingredients using a spatula or mixer on low speed.
Once the dough comes together, chill it in the refrigerator for at least 30 minutes.
Scoop tablespoon-sized portions of dough and roll them into balls, then roll the balls in granulated sugar before placing them on a lined baking sheet.
Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still soft.
Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to wire racks.
