  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon peppermint extract
  • ½ cup crushed candy canes

Method

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Add in the egg, vanilla extract, and peppermint extract, and stir until well combined.
  5. Gradually add the dry mixture to the wet ingredients, stirring until just combined.

  7. In the second bowl, add a few drops of red food coloring and mix until evenly colored.
  8. Scoop tablespoons of each colored dough and roll them together to form balls, then place them on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes, until the edges start to lightly brown.
  10. Remove from the oven and immediately sprinkle with extra crushed candy canes.
  11. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
