Ingredients
  

  • 1 pound chicken breast cubed
  • 2 ripe peaches pitted and diced
  • 1/4 cup bourbon
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 cloves garlic minced
  • 1 teaspoon ginger grated
  • Salt and pepper to taste
  • Skewers wooden or metal

Method
 

  1. Soak wooden skewers in water for 30 minutes if using.
  2. In a bowl, combine diced peaches, bourbon, honey, soy sauce, garlic, ginger, salt, and pepper to create the marinade.
  3. Add the cubed chicken to the marinade, ensuring each piece is coated. Cover and refrigerate for at least 1 hour.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated chicken and diced peaches onto the soaked skewers, alternating pieces for even cooking.
  6. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally until the chicken is cooked through and has grill marks.
  7. Brush leftover marinade over the skewers during the last few minutes of grilling for extra flavor.
  8. Remove from the grill and let the skewers rest for a few minutes before serving.
