Ingredients
  

  • 4 medium beets
  • 4 ounces goat cheese
  • ¼ cup walnuts roughly chopped
  • 3 cups mixed salad greens
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Wash beets thoroughly and wrap each in aluminum foil.
  3. Place wrapped beets on a baking sheet and roast for 45-60 minutes.
  4. Once cooked, let the beets cool slightly before peeling.
  5. Slice the peeled beets into wedges or rounds.
  6. In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
  7. In a large salad bowl, combine mixed greens, sliced beets, goat cheese, and walnuts.
  8. Drizzle the dressing over the salad and toss gently.
  9. Serve immediately, garnished with extra walnuts if desired.
